NOVUS chefs carefully bread whole capelin carcasses in a mixture of flour, black pepper, paprika, salt and turmeric. Fry on both sides until tender golden brown and garnish with fragrant herbs. Crispy ruddy fish goes well with tartar or tkemali sauces.
