It is one of the most famous hard cheeses in France. Maazdam shares its name with the Swiss city where the recipe for this product was developed. Maazdam" is made from cow's milk. At least four weeks it needs to ripen in a cool cellar, to get its own special taste - sweetish-fruity with nutty tones. Under the smooth yellow crust covered with wax lies a pale yellow flesh, riddled with large, equally sized and shaped holes. This is the main mark of distinction of Maazdam. The "eyes" are formed by the action of gases resulting from the ripening of the cheese. "Maazdam is widely used in the kitchen.
