Parmigiano Reggiano is the most famous Italian cheese in the world. It is so called because it is produced only in a few provinces of the Emilia-Romagna region: Parma, Reggio Emilia, Modena, partly Mantova and Bologna. In 2004, there were 512 Parmesan producers. Cheese made outside the region cannot be called Parmesan. Parmesan refers to DOP (Denominazione di Origine Protetta - Protection by Origin) products. The production of the cheese is carefully controlled by a consortium of Parmigiano Reggiano cheese producers. Parmesan is classified as a hard cheese. Its production begins annually on April 1 and ends on November 11. After that, the cheese matures for up to 36 months. To produce Parmesan cheese a year requires milk from 270 thousand cows. To get 1 kg of cheese, you need 16 liters of milk. A head of ripe cheese has a diameter of 35 - 45 cm, a mass of 24 - 40 kg. The structure of the cheese is gritty, scaly, brittle. Parmesan has a sharp, rich flavor and deep aroma.
