Люцерна – название рода растений из семейства Бобовых. В роде Люцерна насчитывается около 50 видов, распространенных в умеренных и теплых областях Европы, в Ближней и Средней Азии, Северной Африке и Австралии. Родиной люцерны считается область Средней Азии, где более чем 6-7 тысяч лет назад это растение использовали в качестве корма для лошадей. Латинское название растение - «medicago» в переводе означает «корм из Мидии», так как именно из этого государства Малой Азии люцерна была завезена в Древнюю Грецию еще в 480 году до нашей эры. В настоящее время во многих странах мира люцерну выращивают как ценное кормовое растение, применяют в лекарственных целях, а в ряде стран Европы растение используют в кулинарных целях – его добавляют в салаты и супы.
Like cabbage and cauliflower, broccoli is a brassica and is sometimes known by its Italian name, calebrese. It has tight clusters of deep green buds and thick, edible stems and was developed from the more loosely packed purple sprouting broccoli. There's little to choose between the two in terms of flavour or nutrition. Broccoli has a strong, positive impact on our body's detoxification system, and researchers have recently identified one of the key reasons for this detox benefit. Glucoraphanin, gluconasturtiian, and glucobrassicin are 3 glucosinolate phytonutrients found in a special combination in broccoli. Isothiocyanates (ITCs) are the detox-regulating molecules made from broccoli's glucosinolates, and they help control the detox process at a genetic level.
