Rubbed rice has smooth grains without lustre. The grains are completely separated from floral films. The colour of rice is white. Rubbed rice falls into the premium or extra, the first and the second grades. Rice is one of the basic cereals on the planet. It is considered to be the native plant of India and Indochina (and according to other sources of Thailand) where it grew as early as 10,000 years ago. Rice had been brought to Europe during the Alexander the Great campaigns. In Russia it started to be cultivated in the XVII century, following the order of Peter the Great. At present almost a thousand various sorts of rice are known to the whole world. Rice forms the staple food of Eastern people and approximately 350,000,000 tons of it are grown every year. Average consumption of rice per one person in Asia constitutes 150 kg a year! Energy value of rice, as well as of other cereals, depends on the kind of grain and the way of its processing. After separation of the floral film and further grain-counter-grain rubbing the quantity of vitamins, mineral salts and cellulose in rice decreases, while the assimilability of carbohydrates and proteins is improved. Rice is characterized by the high content of starch (up to 85%) which is easily acquired; therefore rice is deemed to be a dietary product. But, on the other hand, the starch, present in rice, belongs to the compound carbohydrates necessary for maintenance of muscular force and stamina. Because of that sportsmen always include rice into their diet. By the quantity of proteins rice concedes to other cereals (it is no more than 8%), but amino acid structure of protein found in rice is rather optimal. In boiled rice there are not enough fats (1,5-2,6%), however these fats are rich in valuable unsaturated fat acids which stimulate absorption of vitamins and possess antioxidant properties.
