Cacao is a type of evergreen tree from the genus Theobroma. The plant originates from the subequatorial regions of South America and is cultivated all over the world in the tropics of both hemispheres for the purpose of obtaining seeds used in the confectionery industry and medicine. The word "cocoa" also refers to the seeds of the cocoa tree and the powder obtained from it; the drink has the same name. To prepare cocoa powder, the roasted and cleaned seeds are first crushed and a part of the oil is squeezed out of it, and then finally crushed to a powdery state. Chemical composition. Medicinal properties. Cocoa beans contain a large number of substances, some of them very valuable (about 300 different substances in total). The most important of them are: anandamide, arginine, dopamine (neurotransmitter), epicatechin (antioxidant), histamine, magnesium, serotonin (neurotransmitter), tryptophan, phenylethylamine, polyphenol (antioxidant), tyramine and salsolinol. Serotonin, tryptophan and phenylethylamine have an antidepressant effect. A synergistic effect of these substances is not excluded. The presence of epicatechin in cocoa can reduce the incidence of the most common diseases in Europe (stroke, myocardial infarction, cancer and diabetes) by almost 10%. Contributes to the reduction of the sticking of platelets. Recently, the substance "cocohil" was discovered in the composition of cocoa, which promotes the growth of skin cells and thus the healing of wounds, smoothes wrinkles and reduces the risk of stomach ulcers. Cold cocoa is the fastest muscle restorer after sports or hard physical work, surpassing in this respect special drinks intended for athletes. Cocoa was quite often used to treat upper respiratory tract, throat and larynx diseases. Taste qualities. Application. Cocoa powder is a valuable product for the food industry. It is widely used in the confectionery, bakery and dairy industries. Cocoa is used to make confectionery, desserts, ice cream, and chocolate drinks.
