For the production of Calvados Boulard, 120 different varieties of apples are used, in combinations and proportions known only to the cellar master: bitter apples to give the drink a clear structure, balance and harmony, sweet apples with a high sugar content, bitter malt. finally, sour varieties of apples to give freshness to the final drink. Selected apples are double distilled. The double distillation method involves two successive stages of heating over an open fire.
