Vilnius is a light yellow semi-hard cheese. It has a moderately hard texture with uneven holes and cracks. Industrial Vilnius is made from pasteurized cow's milk and is a great accompaniment to brown/rye bread and dark beers. Vilnius is a common table cheese, it is eaten in salads, melted in sauces, with potatoes, in pies and sandwiches.
