"Hiyashi" is a popular Japanese salad made of brown seaweed and roasted sesame. The delicate nutty note of the dressing perfectly sets off the sweet and sour taste of wakame, and the rich herbal color of the main ingredient is gently combined with the contrasting aromatic sesame. The dish is eaten with chopsticks and is usually served with chicken satay, rice or added to rolls. Hiyashi are low in calories and contain a large amount of calcium, magnesium and folic acid.
