PIZZOCCHERI PASSIONI, typical pasta from Valtellina (northern Lombardy) made with buckwheat flour. This pasta is a kind of short tagliatelle, a flat ribbon pasta, made principally with buckwheat flour and wheat flour. When classically prepared in Valtellina (north Lombardy, in the Alps), they are cooked along with greens cabbage, and cubed potatoes. This mixture is layered with pieces of Valtellina Casera cheese and dressed with garlic lightly fried in butter.
