This amazing Italian soft cheese, made from fresh cow's milk, resembles the most delicate homemade cottage cheese in its consistency. Ricotta is often confused with cottage cheese. There is a difference between these two products. Curd is made by heating milk and mixing it with rennet, causing the milk to curdle and precipitate out the casein. To prepare ricotta, the sediment is heated again, mixed with an enzyme, and the top layer of sediment is called fresh cheese.
